Rutter's Adds Central Pennsylvania Staple to Its Foodservice Menu

Rutter's Chipped Sweet Bologna Gravy

YORK, Pa. — Rutter's added a one-of-a-kind Pennsylvania staple to its menu.

Chipped Sweet Bologna Gravy, featuring Seltzer's Sweet Lebanon Bologna, is now available at all Rutter's locations that offer its full foodservice menu.

"Central Pennsylvania is famous for chipped beef gravy, long considered a local staple. It's a cream-based gravy with chipped dried beef served over toast or mashed potatoes," said Ryan Krebs, director of foodservice for Rutter's. "Lebanon bologna is another central PA staple.

"We experimented one morning and it turns out that bologna gravy has an amazing taste profile. So, we teamed up with local food manufacturer, Winter Gardens, to create a recipe using Seltzer's famous Lebanon bologna that everyone can enjoy," he added.

Chipped Sweet Bologna Gravy is a pepper-laced cream gravy. The chipped pieces of sweet Lebanon bologna add a touch of sweetness to the rich meat gravy, according to Rutter's. It joins the existing Sausage Gravy on Rutter's fresh food menu.

Both gravies can be customized with choice of biscuit, toast, waffle or mashed potatoes.

New Oxford, Pa.-based Winter Gardens has operated as a family owned butcher and prepared food producer since 1946. It uses locally sourced, farm-fresh ingredients. Seltzer's, based in Pennsylvania's Lebanon County, has made its Lebanon Bologna since 1902, using the old-fashioned secret recipe of pure beef and spices handed down for generations.

York-based Rutter's is a family-owned and -operated convenience store chain with roots dating back to 1747. The retailer operates 72 stores in Pennsylvania and West Virginia.
