Alto-Shaam Self-Cleaning Rotisserie Oven

Automatic grease collection system increases safety, reduces labor.

Alto-Shaam's self-cleaning rotisserie oven is designed to make life easier for foodservice operators and decrease cooking times. Time-saving features include automatic cleaning, automatic grease collection, and touchscreen controls. The eco-friendly cleaning system uses 35 percent less water than competitive models and has no moving parts, according to the company. The rotisserie oven also uses 20 percent less electricity — convection heat combined with radiant heating provides even cooking and uniform browning, while the double-pane glass door keeps heat in the oven and is cool to the touch outside. As for the touchscreen controls, Alto-Shaam said they enable operators to set the perfect cooking environment and to create their own recipe programs, including four cooking stages and seven browning levels for the perfect level of crispiness. The ovens are available in stainless-steel, black or burgundy colors. Door options include reach-in or pass-through, and flat or curved glass. A ventless hood is available to operate the rotisserie outside of a traditional kitchen hood.
